Sautéed Swiss chard with savory shiitake mushrooms, topped with grated Parmesan.
Ingredients:
  • 2 tablespoons unsalted butter
  • 6 ounces shiitake mushrooms, sliced 1/4-inch thick
  • 1/4 teaspoon kosher salt
  • 2 large bunches Swiss chard (about 1 1/2 pounds total), rinsed, patted dry, large ribs removed, leaves roughly chopped
  • Pinch Parmesan cheese, grated
Instructions:
  • Heat butter in a large non-stick sauté pan over medium-high heat. Add sliced mushrooms and sprinkle with salt (omit if using salted butter).
  • Introduce chopped chard: After the mushrooms achieve a golden brown hue and release some liquid, introduce the chopped chard leaves to the pan and mix them with the mushrooms. (Add chard in batches if needed to avoid overcrowding the pan.) Once the chard wilts, take the pan off the heat and cover it to let the leaves steam in their own heat for a few minutes.
  • Enhance with Parmesan: Transfer chard and mushrooms to a serving dish and generously sprinkle with grated Parmesan cheese. Serve promptly.
