Sautéed Swiss chard with caramelized onions on a corn tortilla topped with queso fresco and salsa.
Ingredients:
  • 1.5 tablespoons olive oil
  • 1 large onion, cut into 1/4-inch slices
  • 1 tablespoon red pepper flakes, or to taste
  • 0.5 cup chicken broth
  • 1 bunch Swiss chard, tough stems removed and leaves cut crosswise into 1 1/2-inch slices
  • 1 pinch salt
  • 12 (6 inch) corn tortillas
  • 1 cup crumbled queso fresco cheese
  • 0.75 cup salsa
Instructions:
  • 1. In a skillet, warm the olive oil over medium heat. Add the onion and sauté until soft and golden, around 10 minutes. 2. Mix in the garlic and red pepper flakes, cooking until aromatic, approximately 1 minute. 3. Pour in the chicken broth, add Swiss chard and salt. Cover and lower the heat to simmer until chard is almost tender, about 5 minutes. 4. Uncover, raise the heat to medium, and stir until the liquid reduces, roughly 5 minutes. 5. Take off the heat and set aside.
  • In a hot skillet, warm the tortillas for about 1 minute on each side. Fill them with chard, and top with queso fresco cheese and salsa.
