Try a flavorful Lebanese lentil soup with Swiss chard, potatoes, garlic, and tangy lemon juice. Bon appétit!
Ingredients:
  • 8 cups water
  • 1 cup large brown lentils, rinsed
  • 4 cups thinly sliced Swiss chard
  • 4 large potatoes, cut into cubes
  • 1 cup freshly squeezed lemon juice
  • 6 cloves garlic, crushed (or more to taste)
  • 1 tablespoon salt, or to taste
  • 0.5 cup olive oil
Instructions:
  • 1. In a large pot, bring water to a boil. 2. Cook lentils in the boiling water until they begin to soften, for 8 to 10 minutes. 3. Add chard to the pot and continue cooking until wilted, for about 5 minutes.
  • Place the potatoes into the simmering water, lower the heat to medium-low, cover the pot, and simmer until the potatoes are tender, approximately 12 minutes.
  • Combine fresh lemon juice, minced garlic, and a pinch of salt in a bowl, then transfer the mixture to the pot. Simmer for an additional 5 minutes. Stir in fragrant olive oil, increase heat to high, and cook for 1 to 2 more minutes.
