Colorful vegan quinoa dish with chard, mushrooms, and lentils. Try rainbow chard for extra flair!
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups uncooked quinoa, rinsed
  • 1 cup canned lentils, rinsed
  • 8 ounces fresh mushrooms, chopped
  • 1 quart vegetable broth
  • 1 bunch Swiss chard, stems removed
Instructions:
  • In a large pot over medium heat, heat the oil until shimmering. Add the onion and garlic, sauté for 5 minutes until the onion is tender. Stir in the quinoa, lentils, and mushrooms. Pour in the broth, cover, and cook for 20 minutes.
  • Take the pot off the heat and shred the chard. Gently stir it into the pot, cover, and let sit for 5 minutes until the chard is wilted.
