Savor Chef John's versatile bacon and potato frittata with Swiss chard and Parmesan cheese for any meal.
Ingredients:
  • 6 slices bacon, chopped
  • 1 potato, peeled and sliced into thin 1-inch pieces
  • 2 tablespoons water, or as needed
  • 1 clove garlic, thinly sliced
  • 0.5 teaspoon red pepper flakes
  • 1 bunch Swiss chard, chopped
  • 8 eggs, beaten
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler.
  • Brown bacon in a large oven-proof skillet over medium heat until crispy, about 10 minutes. Reserve 1 teaspoon of bacon grease in the skillet.
  • Combine potato slices, water, garlic, red pepper flakes, salt, and black pepper with bacon, cover and simmer until potatoes are tender, approximately 10 minutes.
  • Add Swiss chard to the potato mixture and cook while stirring until the chard is just wilted, about 2 to 3 minutes.
  • Gently pour the beaten eggs over the flavorful potato and chard blend in the skillet, stirring gently. Take the skillet off the heat and sprinkle Parmesan cheese over the luscious egg mixture.
  • Broil in the hot oven until eggs are cooked and frittata is nicely golden around the edges, for 3 to 4 minutes.
