Savory one-skillet frittata with sweet potato, bacon, and veggies. Perfectly balanced flavors. Easy dinner that practically cooks itself!
Ingredients:
  • 1 tablespoon olive oil
  • 2 cups chopped broccoli
  • 1 cup chopped onion
  • 2 cloves garlic, minced, or more to taste
  • 2 cups cubed cooked sweet potato
  • 2 cups fresh spinach
  • 6 slices cooked bacon, chopped
  • 10 large eggs
  • 1 cup half-and-half
  • 1 tablespoon chopped fresh sage
  • 0.5 teaspoon salt
  • fresh sage leaves for garnish
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a 10-inch oven-safe skillet, warm oil over medium heat. Add broccoli and onion, cook until broccoli is tender and onion is translucent, about 5 minutes. Add garlic, cook for 30 seconds. Mix in sweet potato and spinach, cook until spinach wilts, about 1 minute. Lastly, add bacon.
  • In a bowl, combine eggs, half-and-half, chopped sage, salt, and pepper. Pour over vegetables in skillet and gently stir to distribute evenly.
  • Bake in the preheated oven for about 25 minutes, until the eggs are fully set but still tender.
  • Allow to rest for 5 minutes prior to serving, and then adorn with fresh sage leaves.
