Cheesy bacon and veggie rice slice recipe

Make-ahead cheesy slice is a lunchbox favorite. Pair with autumn salad for a quick, delicious meal!
Ingredients:
  • 1 small brown onion, chopped
  • 4 short-cut bacon rashers, chopped
  • 250g pkt microwavable long-grain rice
  • 200g sweet potato, peeled, coarsely grated
  • 1 head broccoli, cut into florets, chopped
  • 120g pea
  • 150g cheese
  • 5 Free Range Eggs, lightly whisked
  • Ground paprika, to serve (optional)
  • Green salad, to serve
  • Tomato chutney, to serve
Instructions:
  • Preheat your oven to 190°C. Line a 16cm x 26cm slice pan with baking paper, ensuring the paper overhangs on the long sides.
  • 1. Heat oil in a frying pan over medium heat. Cook onion and bacon until light golden, stirring occasionally for 5 mins. Stir in garlic and cook for 30 secs. Transfer to a large bowl and let cool slightly.
  • Cook the rice according to the instructions on the packet. Combine it with the bacon mixture in the bowl along with the sweet potato, broccoli, peas, and 1 cup (120g) cheese. Stir everything together until well mixed. Gently mix in the egg and season to taste.
  • Transfer the mixture into the pan, pressing down firmly and smoothing the surface. Sprinkle with the remaining cheese and a touch of paprika, if desired.
  • Bake for 30 minutes until golden brown and set. Allow to cool in the pan for 5 minutes. Cut into pieces and serve with salad and chutney.
