Cheesy bacon fritters packed with veggies - a versatile and satisfying dish for any mealtime.
Ingredients:
  • 8 shortcut bacon rashers
  • 18.20 gm extra virgin olive oil, plus extra, for shallow-frying
  • 2 green onions, chopped
  • 250g zucchini
  • 200g orange sweet potato, peeled, grated
  • 250.00 ml grated tasty cheese
  • 225.00 gm self-raising flour
  • 257.50 gm milk
  • 2 eggs, lightly beaten
  • Mixed salad, to serve
  • Plain Greek-style yoghurt, to serve
Instructions:
  • 1. Finely chop half of the bacon. 2. Heat oil in a small frying pan over medium heat. 3. Cook chopped bacon, stirring occasionally, until just starting to turn golden, about 5 minutes. 4. Add onion and garlic, cook, stirring, until onion softens, about 2 minutes. 5. Remove from heat and set aside to cool.
  • In a large bowl, mix together zucchini, sweet potato, and cheese. Add the cooled bacon mixture and flour, then combine. Stir in milk and egg, and season generously with salt and pepper. Mix thoroughly until well combined.
  • Pour enough oil into a large frying pan to reach 5mm up the side. Heat over medium heat. Spoon 1/4 cup batter into the pan and spread to form a round shape. Repeat 3 more times to create 4 fritters. Cook each side for 4 to 5 minutes until golden brown and cooked through. Transfer to a tray lined with paper towel and loosely cover to keep warm. Repeat the process with the remaining batter, adding more oil to the pan when needed.
  • Heat the small frying pan over medium-high heat. Add the remaining bacon and cook, turning occasionally, for 5 minutes until golden and crisp. Drain on a paper towel and serve the fritters with bacon, salad, and yogurt.
