Cheesy bacon and veggie fritters recipe

Effortless bacon and veggie fritters with creamy Devondale Colby cheese for quick and tasty weeknight meals.
Ingredients:
  • 150g Cheese, coarsely grated
  • 2 zucchini, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 24.00 gm sesame seeds
  • 3 spring onions, thinly sliced
  • 150g short-cut bacon, thinly sliced
  • 1 egg, lightly whisked
  • 35g plain flour
  • 80ml olive oil
  • 200.00g baby spinach leaves
  • 6 baby cucumbers, cut into wedges
  • 125g cherry tomatoes, quartered
  • 1/4 pineapple, peeled, chopped
  • 2 tsp white wine vinegar
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Mix together the cheese, zucchini, carrot, sesame seeds, spring onion, bacon, egg, and flour in a large bowl, and season to taste.
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Spoon four ⅓-cup portions of cheese mixture onto the pan, flatten slightly, and cook for 3 minutes. Flip and continue cooking for 3-4 minutes until golden and cooked through. Transfer to a plate and cover to keep warm. Repeat the process in two batches using 2 tablespoons of oil for each batch.
  • In a large bowl, mix together spinach, cucumber, tomato, pineapple, vinegar, and remaining oil. Season to taste. Serve the fritters alongside the salad topped with fresh parsley leaves.
