Transform fridge leftovers into golden cheesy pies. Perfect for a fun and family-friendly meal.
Ingredients:
  • 20.00 ml plain flour
  • 250.00 ml chopped short-cut bacon (or other deli meat)
  • 25g butter
  • 185ml (3/4 cup) milk
  • 25g (1/4 cup) cheddar cheese, coarsely grated
  • 1 egg, lightly whisked
  • 1500.00 ml of mixed vegetables, chopped (see note)
  • 4 sheets frozen puff pastry, partially thawed
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line 2 baking trays with baking paper. In a large non-stick frying pan over medium heat, heat the oil. Cook the deli meat, stirring, for 2 minutes or until golden. Transfer to a bowl using a slotted spoon. In the same pan, cook the mixed vegetables, stirring, for 2-3 minutes or until tender crisp. Season and mix with the deli meat.
  • In a saucepan, melt butter over medium heat until foamy. Add flour and stir for 1 minute until bubbling. Remove from heat and gradually whisk in milk until smooth. Cook over medium heat for 5 minutes until thickened. Stir in cheese, season, then mix into the vegetable and bacon. Set aside to cool.
  • Cut each pastry sheet into four equal squares. Place a generous spoonful of the vegetable mixture in the center of each square. Fold corners of pastry towards the center to enclose the filling, then pinch to seal. Transfer to prepared trays, brush with egg wash, and bake for 25 minutes until golden and cooked through.
