Indulge in the comforting flavors of a classic pastitsio, perfect for a family feast.
Ingredients:
  • 300g maccheroni pasta
  • 2 eggs, lightly beaten
  • 185g cheese
  • 35g breadcrumbs
  • 36.40 gm olive oil
  • 2 onions, finely chopped
  • 1kg beef mince
  • 0.63 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 60g tomato paste
  • 400g can diced tomatoes
  • 180ml red wine
  • 100g butter, chopped
  • 75g plain flour
  • 1 litre milk
  • 1/4 tsp freshly grated nutmeg
  • 125g cheese
  • 3 egg yolks
Instructions:
  • Preheat the oven to 180C. Start the meat sauce by heating oil in a large frying pan over medium heat. Sauté onions with 1 1/2 teaspoons of salt until soft, about 5 minutes. Add mince and cook for 5 more minutes, breaking it up with a spoon. Stir in spices, tomato paste, diced tomatoes, wine, and black pepper to taste. Simmer for 20 minutes until thick. In the meantime, cook pasta in a large pot of boiling salted water until al dente. Drain the pasta and return it to the pot off the heat. Quickly toss in eggs and 3/4 of the cheese.
  • In a saucepan, melt butter over gentle heat. Add flour and stir for 1 minute. Take the pan off the heat. Slowly whisk in milk until smooth. Return to heat and whisk until it boils and thickens. Remove from heat and mix in nutmeg and cheese. Season with salt and pepper. Let it cool slightly, then whisk in egg yolks.
  • Grease a 23 x 29cm (4-litre capacity) ovenproof dish, then sprinkle half the breadcrumbs over the base. Add the pasta mixture followed by the meat sauce, then pour over the bechamel sauce. Finish by scattering the remaining breadcrumbs and cheese on top. Bake for 1 hour, or until the top is golden and set. Allow it to stand for 10 minutes before serving.
