Patatas bravas

Classic Spanish tapas: Patatas Bravas, vegetarian and gluten-free.
Ingredients:
  • 650g packet frozen traditional roast potatoes
  • 18.20 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/4 tsp dried chilli flakes
  • 2.50 gm smoked paprika
  • 2 tsp fresh thyme leaves
  • 400g can diced tomatoes
  • Roughly chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • Preheat the oven to 210C/190C fan-forced. Line a large baking tray with baking paper, then place the potatoes on it. Roast for 25-30 minutes until golden and crisp.
  • Heat oil in a large non-stick pan over medium heat. Sauté onion until just softened, then add garlic, chilli, paprika, and thyme; cook until fragrant. Stir in tomatoes, bring to a simmer, then reduce heat and simmer until slightly thickened, about 10 minutes.
  • Combine the roast potatoes with the tomato mixture in the pan, gently mixing to coat them. Season with salt and pepper, then serve sprinkled with parsley for a finishing touch.
