Spicy, smoky Spanish roasted "patatas bravas" are irresistibly delicious.
Ingredients:
  • 2 pounds Yukon gold potatoes, or other waxy potato (peeled or un-peeled, your choice), cut into 1 to 1 1/2-inch chunks
  • Extra virgin olive oil
  • Salt
  • 1/2 medium yellow onion, chopped
  • 3 garlic cloves, chopped
  • 1/2 cup white wine (can substitute stock)
  • 2 tablespoons tomato paste
  • A 14-ounce can of crushed tomatoes
  • 2 teaspoons Tabasco or other hot sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon sugar
Instructions:
  • Prepare the potatoes: Coat them with 3 tablespoons of olive oil and salt. Place in a single layer on a baking tray and roast at 375°F until golden brown, approximately 50 minutes.
  • In a medium pot over medium-high heat, heat 2 tablespoons of olive oil. Sauté chopped onions for 4-5 minutes until they start to brown, then add garlic and sauté for another 2 minutes.
  • Prepare the sauce: Pour the white wine into the pan and increase the heat to high. Boil until the wine reduces by half. Stir in the tomato paste, crushed tomatoes, Tabasco sauce, salt, sugar, and smoked paprika. Reduce the heat to a low simmer and let the sauce cook gently as the potatoes roast. For a velvety texture, blend the sauce to smooth perfection using a blender or immersion blender, if desired.
  • Coat potatoes in sauce, roast until caramelized: Coat the well-browned potatoes with tomato sauce and place back in the casserole pan. Roast until the sauce dries out a bit and caramelizes on the potatoes, around 10 minutes. Serve with extra tomato sauce as an appetizer or side dish. Enjoy the dish?
