Prepare a fun and flavorful tapas-inspired spread for a teen gathering!
Ingredients:
  • 800g sebago potatoes, peeled, cut into 4cm pieces
  • 36.40 gm olive oil
  • 1 large red onion, halved, thinly sliced
  • 5.00 gm sweet paprika
  • 400g can chopped tomatoes
  • 127.50 gm chicken style liquid stock
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Toss the potatoes with half of the oil in a large roasting dish. Season with salt and pepper. Roast for 30-40 minutes until golden and cooked through.
  • Heat up the rest of the oil in a frying pan over medium-high heat. Sauté the onion for 5 minutes until softened. Stir in the garlic and paprika, cook for 1 minute until fragrant. Mix in the tomato and stock, then bring to a boil. Lower the heat and simmer for 10 minutes until thickened.
  • Take the potatoes out of the oven and gently mix in the flavorful tomato mixture. Roast for an additional 15 minutes, or until everything is heated through. Serve and enjoy!
