Elevate any event with a luxurious snack: store-bought pate and homemade cumquat marmalade on buttery brioche.
Ingredients:
  • 25g butter
  • 1 brown onion, halved, sliced
  • 8 cumquats, each sliced into 4 discs
  • 1 250g jar breakfast marmalade
  • 1 brioche loaf
  • 1 150g pkt cracked peppercorn pate log
Instructions:
  • In a small saucepan, melt the butter over medium-high heat until foamy. Cook the onion and cumquats for 8-10 minutes until onion is lightly browned. Add marmalade and cook for 4-5 minutes until melted. Let it cool for 5 minutes before using.
  • Preheat the grill on high. Slice the brioche into eight 1cm-thick slices and place them on a baking tray. Toast the slices under the grill until lightly golden on both sides. Serve on plates.
  • Spread the pate generously on toasted brioche, then top with a dollop of tangy cumquat marmalade before serving.
