Pavlovas with chocolate, mangoes and lime syrup

Indulge in festive mango pavlovas by Curtis Stone for the perfect Christmas treat.
Ingredients:
  • 6 large free-range egg whites
  • 0.60 gm sea salt
  • 1.25 gm cream of tartar
  • 4.40 gm vanilla extract
  • 376.25 gm caster sugar
  • 20.00 gm cornflour
  • 200g block dark (preferably 70% cocoa) cooking chocolate, chopped
  • 505.00 gm thickened cream
  • 2.20 gm vanilla extract
  • 82.50 gm water
  • 40.00 ml lime zest
  • 42.00 gm fresh lime juice
  • 4 mangoes, peeled, pitted, cut into about 1.5-cm dice
Instructions:
  • Preheat the oven to 135C (115C fan) and line 2 large baking trays with baking paper for the pavlovas.
  • Using an electric stand mixer with a whisk attachment, beat egg whites, salt, cream of tartar, and vanilla on medium-high speed for 2-3 minutes until medium peaks form. While still mixing, gradually add sugar and beat for another 5-7 minutes until firm peaks form. Sift corn flour into the meringue and beat for 30 seconds.
  • Scoop out 4 even large mounds on each baking tray. Create a well in the center of each mound using the back of a spoon. Bake the pavlovas for approximately 1 hour until they are crispy on the outside. Turn off the oven, slightly open the door, and let the pavlovas cool inside until cold.
  • Melt the chocolate in a bowl over simmering water. Dip the pavlovas' bases into the melted chocolate, gently twisting them. Place the pavlovas upside down on racks or trays to chill at room temperature for about two hours until the chocolate sets.
  • Prepare the mangoes: In a small heavy based saucepan, mix water, sugar, lime zest, and juice. Bring to a simmer over high heat, stirring to dissolve the sugar. Simmer for around 4 minutes until the syrup reduces by half and thickens. Let it cool, cover, and refrigerate until cold. Mix in the mangoes.
  • For serving: Whip cream and vanilla in a large bowl until thick. Place a pavlova on each of 8 plates. Add a generous dollop of whipped cream on top. Using a slotted spoon, place mangoes from syrup over and around the pavlovas. Drizzle with syrup and serve right away.
