Quick and tasty summer side salad perfect for barbecues and picnics, ready in just 20 minutes.
Ingredients:
  • 500g fresh broad beans or frozen broad beans
  • 300g pea
  • 200g feta, crumbled
  • 1 red onion, finely chopped
  • 1 preserved lemon quarter, finely chopped
  • 100g baby snow pea tendrils
  • 36.40 gm olive oil
Instructions:
  • Blanch the broad beans in a pot of salted boiling water for 2 minutes until tender. Immediately cool them in cold water, then peel and discard the skins.
  • Boil peas in a large pot of salted water for 1 minute until tender. Drain and cool under cold water. Combine in a bowl with broad beans, feta, mint, onion, preserved lemon, and snow pea tendrils. Drizzle with oil and lemon juice, season with salt and pepper, and gently toss to mix. Serve in a large bowl.
