Ingredients:
  • 450g pea
  • 300g sugar snap peas, halved
  • 200g butter beans, trimmed
  • 500g pkt broad beans, defrosted, peeled
  • 4 purple Asian shallots, finely chopped
  • 60ml lemon juice
  • 250g feta, crumbled
  • 250.00 ml mint leaves
Instructions:
  • In a large saucepan of salted boiling water, cook peas, sugar snap peas, and butter beans for 2-3 minutes. Then add broad beans and cook for an additional minute until bright green and tender crisp. Refresh in cold running water and drain well.
  • In a small bowl, mix shallots, lemon juice, and oil. Season with salt and pepper to taste. Drizzle over pea mixture and gently toss to combine.
  • Combine the feta and fresh mint, then gently mix together. Transfer to a serving bowl and enjoy right away.
