Elevate spring flavors with a refreshing honeydew and pea salad.
Ingredients:
  • 100g sugar snap peas, trimmed
  • 100g snow peas, trimmed
  • 125.00 ml shelled fresh peas (see notes)
  • 1/2 honeydew melon
  • 1 Lebanese cucumber, peeled into ribbons
  • 2 green onions, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 42.00 gm lime juice
  • 18.40 gm vegetable oil
  • 2.50 gm caster sugar
  • 1 long green chilli, finely chopped
  • 40.00 ml unsalted roasted peanuts, roughly chopped
Instructions:
  • Boil peas in a large saucepan of salted water for 2 minutes until vibrant green and slightly tender. Drain, then cool under cold water and drain well before transferring to a serving bowl.
  • Prepare the melon by removing and discarding the seeds. Use a melon baller to create melon balls and add them to a serving bowl along with cucumber, onion, and coriander.
  • In a small bowl, combine lime juice, oil, sugar, and chili. Stir until the sugar dissolves. Drizzle the dressing over the salad, season with salt and pepper, gently toss to combine, sprinkle with peanuts, and serve.
