Mixed melon Greek salad

Revamp your Greek salad with a touch of rockmelon and honeydew melon for a burst of freshness.
Ingredients:
  • 300g rockmelon
  • 300g honeydew melon
  • 200g tomato medley, quartered
  • 1 Lebanese cucumber, thinly sliced
  • 1 small red onion, thinly sliced into rounds
  • 82.50 ml pitted kalamata olives
  • 40.00 ml fresh oregano leaves
  • 82.50 ml small fresh basil leaves
  • 18.20 gm extra virgin olive oil
  • 40.00 ml white wine vinegar
  • 100g fetta, cut into 1cm cubes
Instructions:
  • Start by halving each melon lengthwise, creating two wedges. Remove and discard the skin and seeds, then slice the melon into 1cm pieces and place them in a large bowl.
  • Combine tomato, cucumber, onion, olives, oregano, and basil in a bowl. Toss ingredients together until well mixed. Transfer to a serving plate.
  • Combine oil and vinegar in a small jug, whisking until well mixed. Season with salt and pepper to taste. Sprinkle salad with feta cheese and generously drizzle with the prepared dressing. Serve and enjoy!
