Prosciutto-wrapped mixed melons

Flavorful and easy antipasto idea.
Ingredients:
  • 16 fresh mint leaves
  • 1/4 rockmelon, peeled, cut into 8 small wedges
  • 1/4 honeydew melon, peeled, cut into 8 small wedges
  • 8 slices prosciutto, halved lengthways
Instructions:
  • Gently lay a mint leaf on the edge of a slice of melon. Carefully wrap prosciutto around the middle of the melon to cover half of the mint leaf.
  • Continue layering the remaining mint leaves, slices of melon, and prosciutto. Sprinkle with freshly cracked black pepper. Serve and enjoy.
