Pea, feta and mint fritters

Ingredients:
  • 500.00 ml frozen peas, thawed
  • 200g low-fat feta, crumbled
  • 20.00 ml chopped fresh mint leaves
  • 4 green onions, thinly sliced
  • tomato chutney, to serve
  • 99.00 gm self-raising flour
  • 2 eggs
  • 128.75 gm milk
Instructions:
  • Prepare the basic batter by sifting flour into a bowl, creating a well in the center. In a separate jug, whisk together the milk and eggs. Pour the egg mixture into the flour and whisk until smooth.
  • In a bowl, mash peas until nearly smooth. Stir in feta, mint, and onion.
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Cook 1 heaped tablespoon of mixture for each fritter, turning once, until golden and cooked through, about 3 minutes per side. Repeat to make a total of 16 fritters. Serve with tomato chutney.
