Ingredients:
  • 125.00 ml fresh baby peas or frozen baby peas
  • 1 Lebanese cucumber, sliced
  • 100g baby spinach leaves
  • 2 green onions, sliced diagonally
  • 2 ripe avocados, peeled and sliced
  • 80ml buttermilk
  • 10.60 gm lemon juice
  • 1 small garlic clove, crushed
  • salt and cracked black pepper
Instructions:
  • Cook the peas in a pot of salted boiling water for 2 minutes. Drain, then transfer to a bowl of ice water for 5 minutes. Drain once more and set aside.
  • Place the cucumber, spinach leaves, green onion, peas, and avocado elegantly on a generous serving platter.
  • Combine the buttermilk, lemon juice, garlic, salt, and pepper in a small bowl and whisk together until fully mixed.
  • Drizzle the dressing over the salad and serve it promptly alongside the turkey.
