Chilled pea, mint, and tomato salad - perfect for beach picnics.
Ingredients:
  • Olive oil spray
  • 200g (1 1/4 cups) shelled fresh peas
  • 6 large eggs
  • 125g cherry tomatoes, halved
  • 40.00 ml chopped fresh mint
Instructions:
  • Preheat your oven to 200°C. Lightly grease a 20cm square baking dish with olive oil spray.
  • Boil peas in a medium saucepan for 3 minutes until bright green and tender crisp. Quickly cool in cold water and drain.
  • In a large bowl, gently mix the eggs with peas, tomato, and fresh mint until well combined. Season with a pinch of salt and pepper. Transfer the mixture into a prepared baking dish. Bake in the oven for 20 minutes or until fully cooked. Allow it to cool before cutting into squares for serving.
