Pea omelette with crispy bacon and tomato

Speedy pea omelette, perfect for busy nights on a budget!
Ingredients:
  • 1 middle bacon rasher, trimmed, halved
  • 5 cherry tomatoes, halved
  • 9.20 gm extra virgin olive oil
  • 2 tsp chopped fresh chives
  • 40.00 ml frozen peas
Instructions:
  • In a large frying pan over medium-high heat, cook bacon and tomato, turning occasionally, for about 3 minutes until the bacon is golden and the tomato is just starting to collapse.
  • Heat oil in a small non-stick frying pan with an 18cm base over medium-high heat.
  • Combine eggs, half of the chives, and 1 tablespoon water in a small jug, whisk until well combined. Season with salt and pepper. Pour into prepared pan and gently stir from edges to center. Tilt pan to spread uncooked egg. Sprinkle with peas and cook for 2 minutes until nearly set.
  • Layer bacon and tomato on one half of the omelette, then fold over to cover the filling. Sprinkle with the remaining chives and serve.
