Delicious and effortless pea, feta, and prosciutto frittatas.
Ingredients:
  • 8 slices prosciutto
  • 55g pea
  • 40g feta, crumbled
  • 20.00 ml finely chopped chives
  • 4 eggs, lightly whisked
  • 40.40 gm thin cream
Instructions:
  • Preheat the oven to 160°C. Lightly grease eight muffin pans that hold 1/3 cup (80ml) each, then line them with prosciutto slices.
  • Divide peas, feta, and chives evenly into each muffin pan. In a jug, whisk eggs and cream lightly with a fork. Season with salt and pepper, then pour the mixture evenly into the muffin pans.
  • Bake in a preheated oven for 20 minutes, or until just set. Remove from the oven and let it cool before chilling in the fridge.
