Get ready for amazing pancakes!
Ingredients:
  • 386.25 gm milk
  • 1 egg
  • 300.00 gm self-raising flour
  • 0.63 gm bicarbonate of soda
  • 53.75 gm caster sugar
  • 25g butter, melted
  • 68.75 gm sweet chilli sauce
  • 2 garlic cloves, crushed
  • 2 green onions, thinly sliced
  • 125.00 ml frozen peas
  • 1 small carrot, peeled, grated
Instructions:
  • In a jug, combine milk, egg, and vanilla, whisking until smooth. In a separate bowl, sift flour and bicarbonate of soda, then stir in sugar. Create a well in the center and pour in the milk mixture, whisking until just combined. Fold in sweet chili sauce, garlic, onion, peas, and carrot. Season with salt and pepper to taste.
  • Preheat a large non-stick frying pan over medium heat and brush with butter. Pour 1/4 cup of batter for each pancake and cook for 3-4 minutes until bubbles form. Flip and cook for another 3 minutes until done. Keep warm under foil after transferring to a plate. Repeat with rest of the batter, remembering to brush the pan with butter between batches. Serve hot.
