Pea & watercress salad with wasabi dressing

Ingredients:
  • 250g sugar snap peas, topped, washed
  • 150g snow peas, topped, washed
  • 125g (about 1/2 bunch) watercress, ends trimmed
  • 20.00 ml mirin
  • 3/4 tsp wasabi paste
  • 5.00 gm caster sugar
  • Salt & freshly ground black pepper
Instructions:
  • Create a stunning display by lining the edge of a microwave-safe dish with sugar snap peas in a circular pattern, making sure they are 2-3 layers deep. Fill the center with snow peas, arranging them 3-4 layers deep for a beautiful arrangement.
  • Cover with a lid or plastic wrap and microwave on High for 3 1/2-4 minutes until bright green and tender crisp. Transfer to a colander, rinse under cold water, drain well, and gently pat dry with paper towels. Combine with watercress in a large bowl.
  • Prepare the wasabi dressing by whisking mirin and wasabi in a bowl until wasabi dissolves. Mix in oil, soy sauce, sugar, salt, and pepper, whisking vigorously until well combined.
  • Drizzle the dressing over the salad and toss with care. Serve promptly.
