Pea & zucchini salad with mint

Seasonal produce salad celebrates freshness.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 40.00 ml white balsamic vinegar
  • 200g green round beans, trimmed
  • 200g snow peas, trimmed
  • 150g (1 cup) frozen peas, or fresh peas
  • 3 zucchini, trimmed, peeled into ribbons
  • 187.50 ml fresh mint leaves
  • Shaved parmesan, to serve
Instructions:
  • Combine oil and vinegar in a jar with a lid, shake well. Season with salt and pepper to taste.
  • Simmer beans and snow peas in boiling water. Add peas halfway through and cook for 2 minutes until vibrant and crisp-tender. Plunge into cold water to cool. Drain well.
  • Arrange the beans, snow peas, peas, and zucchini beautifully on a large serving platter. Drizzle the dressing on top and sprinkle with fresh mint and grated Parmesan cheese.
