Elevate chicken pasta salad with crisp pea pods, almonds, and zesty ginger-soy dressing.
Ingredients:
  • 1 1/2 cups uncooked rotini pasta (3 1/2 oz)
  • 3/4 lb fresh snow pea pods (3 cups), trimmed, cut in half crosswise
  • 3 cups cubed cooked chicken or turkey
  • 3/4 cup sliced green onions (12 medium)
  • 1 can (8 oz) sliced water chestnuts, drained
  • Lettuce leaves, if desired
  • 1/3 cup slivered almonds, toasted*
  • 3/4 cup mayonnaise or salad dressing
  • 2 teaspoons soy sauce
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground ginger
Instructions:
  • Prepare the pasta according to package instructions, adding pea pods for the last 1 to 2 minutes of cooking. Drain the pasta and pea pods, rinse with cold water to cool, then drain well.
  • Combine chicken, onions, and water chestnuts in a large bowl. In a separate small bowl, thoroughly blend the dressing ingredients.
  • Combine the cooled cooked pasta and pea pods with the chicken mixture, then pour the dressing over the salad and gently mix to coat everything. Refrigerate for at least 3 hours before serving.
  • Place a bed of fresh lettuce leaves in a beautiful serving bowl. Generously spoon the vibrant salad mixture over the lettuce. Finish by sprinkling a generous amount of crunchy almonds on top for added texture and flavor.
