Pea soup with prosciutto

Budget-friendly winter warmer: Delicious pea soup.
Ingredients:
  • 600g (4 cups) frozen peas
  • 500ml (2 cups) chicken style liquid stock
  • 250ml (1 cup) water
  • 9.20 gm olive oil
  • 4 thin slices prosciutto
  • 80ml (1/3 cup) light thickened cream
Instructions:
  • In a saucepan, combine peas, stock, and water over high heat. Cover and bring to a boil, then simmer on medium heat, partially covered, for 8 minutes until peas are tender. Allow to cool for 10 minutes before using.
  • Heat oil in a large frying pan over medium-high heat and crisp up the prosciutto for 2-3 minutes per side. Transfer to a paper towel-lined plate and let cool.
  • Pour the pea mixture into a food processor or blender and blend until smooth. Transfer the soup to a saucepan over medium heat, stirring until warmed. Season with salt and pepper to taste.
  • Divide the soup into bowls, then generously drizzle with cream. Break the prosciutto into large pieces and artfully arrange on top. Serve immediately.
