Enjoy a festive outdoor Australian Day with this vibrant peach, tomato, and ham salad on-the-go!
Ingredients:
  • 6 slices prosciutto
  • 60g natural almonds
  • 40.00 ml white wine vinegar
  • 23.40 gm Dijon mustard
  • 1 pinch ground cloves
  • 100ml extra virgin olive oil
  • 4 ripe peaches, cut into wedges
  • 4 vine-ripened tomatoes, cut into wedges
  • 750.00 ml rocket
Instructions:
  • Preheat your oven to 190C. Line an oven tray with baking paper and arrange the prosciutto in a single layer. Place the almonds on a separate small tray. Bake both trays for 8 minutes until the prosciutto is crispy and the almonds are toasted. Allow them to cool before serving.
  • In a bowl, vigorously whisk together vinegar, mustard, cloves, 1/4 teaspoon salt, and freshly ground black pepper. Gradually mix in the oil until well combined.
  • Combine peaches, tomatoes, and rocket in a large bowl. Halve almonds and add to the bowl, then crumble in prosciutto. Drizzle with dressing and gently toss to mix. Serve the salad promptly.
