Indulge in irresistible Peach Cranberry Muffins using fresh peaches and tart cranberries.
Ingredients:
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.25 cups applesauce
  • 3 eggs, lightly beaten
  • 2 cups peeled, pitted, and chopped peaches
  • 1.5 (12 ounce) packages fresh cranberries
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare 24 muffin cups by greasing them or lining them with paper liners.
  • In a large bowl, combine 3 cups of flour with cinnamon, baking soda, and salt using a whisk. In another bowl, mix white sugar, applesauce, and eggs. Combine the sugar mixture with the flour mixture and stir until just combined. Gently fold in peaches and cranberries. Spoon the batter into muffin cups and bake.
  • Combine brown sugar and flour in a small bowl, then generously sprinkle over the muffins.
  • Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool for 10 minutes before transferring to a wire rack to cool completely.
