Mouthwatering summer peach and blueberry pie with a perfect double crust - a delightful flavor fusion.
Ingredients:
  • 1 pastry for a double-crust 9-inch pie
  • 3 cups sliced peaches
  • 1 cup blueberries
  • 2 tablespoons fresh lemon juice
  • 1 cup white sugar
  • 2 tablespoons quick-cooking tapioca
  • 0.5 teaspoon salt
  • 2 tablespoons margarine, cut into pieces
Instructions:
  • Preheat the oven to 425°F (220°C), then gently place one pie crust into a 9-inch pie plate.
  • Combine fresh peaches and blueberries in a bowl with zesty lemon juice. In a separate small bowl, mix sugar, tapioca, and salt, then add this to the fruit mixture and gently combine. Let the fruity goodness rest for 15 minutes.
  • Place the fruit into the pie crust, then sprinkle butter pieces over the fruit. Moisten the edge of the pie with water. Top the pie with the remaining crust, pressing and sealing the top and bottom crusts together.
  • Bake until the crust turns a golden brown and the fruit is bubbly for 45 to 50 minutes in the preheated oven.
