Peach chutney with leg ham and brie

Elevate your sandwich game with ham, creamy brie, and tangy homemade chutney.
Ingredients:
  • 40g butter
  • 1 brown onion, halved, thinly sliced
  • 16.00 gm brown sugar
  • 1.25 gm ground ginger
  • 1.25 gm mixed spice
  • 1/4 tsp ground cloves
  • 60ml (1/4 cup) apple cider vinegar
  • 1kg ripe yellow slipstone peaches, halved, peeled, stones removed, cut into 2cm pieces
  • Brie, at room temperature, to serve
  • Thick slices sourdough bread, to serve
Instructions:
  • In a large saucepan over medium-high heat, melt the butter until foaming, then add the onion and cook, stirring occasionally, for 5 minutes until soft. Next, add the sugar, ginger, mixed spice, and cloves, then cook and stir for 30 seconds until fragrant.
  • Combine vinegar and fresh juicy peaches in a pot and bring to a vigorous boil. Lower the heat to medium and let it gently simmer, uncovered, stirring occasionally, for 35 minutes until the mixture thickens, becomes pulpy, and the liquid reduces. Take it off the heat and let it sit in the pan for 30 minutes to cool.
  • Serve the peach chutney alongside sliced leg ham and brie on a slice of fresh sourdough.
