Delicious Indian-inspired peach chutney, made with fresh peaches, ginger, mustard seed, and curry powder. Perfect pairing with cheese.
Ingredients:
  • 4 pounds sliced peeled peaches
  • 4 cups packed brown sugar
  • 4 cups apple cider vinegar
  • 1 cup raisins
  • 5 ounces chopped preserved ginger
  • 0.5 cup chopped onion
  • 2 cloves garlic, minced
  • 1.5 tablespoons chili powder
  • 1 tablespoon mustard seed
  • 1 teaspoon curry powder
  • 0.25 cup pickling spice
Instructions:
  • In a large heavy pot, mix together peaches, brown sugar, apple cider vinegar, raisins, ginger, onion, garlic, chili powder, mustard seed, curry powder, and add a cheesecloth bag filled with pickling spice.
  • Simmer uncovered until the chutney thickens to your liking, stirring occasionally to prevent sticking, for about 1 ½ hours.
  • After steeping, discard the spice bag and carefully transfer the chutney into the prepared hot, sterilized jars. Clean the rims using a damp cloth. Seal tightly with lids and rings. Place the jars in a water bath with simmering water for 10 minutes, ensuring the jars are fully submerged. Follow local extension guidelines for processing time if different.
  • After removing the jars from the stockpot, allow them to cool for 12 to 24 hours well spaced. Press the center of each lid to check for a secure seal. Finally, remove the rings and store the jars in a cool, dark place.
