Whip up a delicious peach chutney during peak peach season for long-lasting flavor.
Ingredients:
  • 1 red onion, chopped
  • 2cm piece ginger, peeled, finely grated
  • 2 lemongrass stalks, white part chopped
  • 1/4 tsp cracked black pepper
  • 1.5kg fresh peaches, peeled, stones removed, chopped
  • 45.00 gm brown sugar
  • 82.50 ml red wine vinegar
  • Crusty bread, to serve
  • Leftover ham, to serve
  • Baby spinach, to serve
Instructions:
  • In a saucepan over medium heat, warm the oil and sauté the onion, garlic, ginger, and lemongrass for 2 minutes until they are softened.
  • Combine pepper, peaches, sugar, and vinegar in a pot and stir until the sugar dissolves. Bring the mixture to a boil, then reduce heat to medium-low. Simmer, stirring occasionally, for 20 to 30 minutes until it reaches a pulpy texture. Let it cool completely before transferring it into a sterilized 3-cup jar.
  • Enjoy this versatile chutney over bread with ham and spinach or pair it with cheese and crackers. Keep refrigerated for freshness for up to 6 weeks.
