Fresh peach chutney

Ingredients:
  • 1kg yellow peaches, peeled
  • 1 small red onion, finely chopped
  • 2 garlic cloves, crushed
  • 5cm piece fresh ginger, peeled, grated
  • 125.00 ml malt vinegar
  • 112.50 gm white sugar
  • 44.00 gm sweet chilli sauce
Instructions:
  • Halve the peaches, remove the pits, and roughly chop the flesh.
  • In a large microwave-safe bowl, mix peaches, onion, garlic, ginger, vinegar, sugar, and sweet chili. Microwave uncovered on high for 25-30 minutes in 5-minute intervals, stirring each time, until the chutney thickens.
  • Transfer the steaming chutney into preheated sterilized jars. Gently place a tea towel over the jars and let cool. Secure tightly with lids and label. Keep refrigerated once opened. Enjoy on Christmas day with ham or turkey, or spread on sandwiches.
