Revamped peach fritters with Bourbon whiskey syrup and vanilla ice cream.
Ingredients:
  • 1 cup cubed fresh peach (about 1 very large, or 2 small peaches)
  • 2 tablespoons white granulated sugar
  • 1/8 teaspoon vanilla extract
  • pinch nutmeg
  • pinch cinnamon
  • 1 tablespoon panko breadcrumbs
  • 1/2 cup self-rising flour
Instructions:
  • Place diced peaches in a bowl and thoroughly mix with 2 tablespoons of sugar. Cover and allow to rest at room temperature for 30 minutes. The peaches will naturally release their juices, creating a delicious syrup at the base of the bowl.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Gently blend vanilla extract, nutmeg, cinnamon, and panko breadcrumbs into the peaches. Mix in self-rising flour until the batter is uniformly moistened, about 1 minute. Let the batter rest for 3 to 5 minutes before frying.
  • Spoon 6 generous dollops of batter into the hot oil. Fry for 90 seconds. Carefully flip fritters and cook for another 90 seconds. Flip again and cook for 1 more minute.
  • Allow the dish to cool on a rack until slightly warm.
  • In a small saucepan over medium heat, mix 1/4 cup sugar with water and Bourbon. Let it boil for 1 minute while stirring occasionally. Remove from heat and cool to room temperature. For a thicker syrup, boil an additional minute. Refrigerate if making ahead.
  • Top the fritters with a scoop of creamy vanilla ice cream and drizzle with decadent Bourbon syrup.
