Peach Melba Crumble Bars: Sugar cookie crust with peach preserves and raspberries. Easy to make with Betty's sugar cookie mix. Perfect party dessert for 16 people.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 3/4 cup peach preserves
  • 1 tablespoon lemon juice
  • 1 cup fresh raspberries
Instructions:
  • Preheat the oven to 375°F and generously coat a 9-inch square pan with cooking spray.
  • Place the cookie mix in a large bowl. Use a pastry blender or fork to cut in the butter until the mixture is crumbly (be careful not to overmix). Set aside 1 cup of the cookie mixture for the topping. Press the remaining mixture into the bottom of the pan and bake for 10 minutes.
  • Combine peach preserves and lemon juice in a medium bowl until fully incorporated. Carefully fold in raspberries, then spread the mixture evenly over the partially baked crust. Sprinkle the reserved cookie mixture over the filling.
  • Bake until the top is a lovely light golden brown and the edges are bubbling, for about 28 to 32 minutes. Allow it to cool completely, approximately 1 hour and 30 minutes.
  • Slice into 16 individual bars and store any extras in the fridge.
