Tangy peach jam with spicy habanero - versatile condiment.
Ingredients:
  • 2 pounds fresh peaches - peeled, pitted, and diced
  • 5 habanero peppers, seeded and minced
  • 4 cups white sugar
  • 1 cup brown sugar
  • 3 fluid ounces whiskey
  • 2 tablespoons cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon white vinegar
  • 2 sterilized pint-sized jars
Instructions:
  • In a large pot, mix peaches, habanero peppers, white sugar, brown sugar, whiskey, cider vinegar, lemon juice, and vinegar. Allow the mixture to rest at room temperature for 1 hour.
  • Bring the mixture to a gentle boil and simmer for 20-25 minutes. Test for doneness by dropping a teaspoon of jam onto a plate. If the jam is thick and doesn't run, it is ready. If it runs, continue cooking for an additional 5 minutes.
  • Transfer the jam into jars. Clean the rims, seal the jars, and let them cool to room temperature before refrigerating.
