Indulge in Chef John's easy and refreshing peaches and cream dessert with ripe peaches, rich cream, and a hint of sweetness - a summer delight!
Ingredients:
  • 4 medium fresh peaches, or as needed
  • 0.33333334326744 cup white sugar, or to taste
  • 0.25 cup water
  • 1.5 cups heavy cream
Instructions:
  • Halve each peach along the crease, twist to open, and discard the pit. Peel and slice the peaches, then cut the slices in half to yield approximately 2 cups of sliced peaches.
  • In a saucepan over medium-high heat, simmer sugar and water until a syrup forms in about 3 minutes. Coat peaches in the syrup, then briefly simmer for about 1 minute. Remove from heat and transfer to a bowl to cool for 15 to 20 minutes before serving.
  • Transfer the peaches to a large bowl with a slotted spoon. Discard or save the simple syrup. Stir in the heavy cream. Divide the mixture into six serving glasses or bowls, cover with plastic wrap, and refrigerate for at least 3 hours until completely chilled and infused with peach flavor.
