Citrus sparkler with peach schnapps - perfect for light salads.
Ingredients:
  • 5 cups water
  • 1/4 cup sugar
  • 1 (12-oz.) can frozen orange juice concentrate, thawed
  • 1 (12-oz.) can frozen lemonade concentrate, thawed
  • 2 1/2 cups peach-flavored schnapps
  • 1/3 cup lemon juice
  • 1 (2-liter) bottle (8 1/2 cups) ginger ale, chilled
Instructions:
  • In a medium saucepan, mix together sugar and 2 cups of water until fully combined. Bring to a boil and let it bubble for 3 minutes. Allow it to cool slightly before using.
  • Combine orange and pineapple concentrates, the remaining 3 cups of water, schnapps, and lemon juice in a large nonmetal container, blending well. Stir in the sugar mixture. Cover and freeze for at least 8 hours, or overnight until frozen, stirring 2-3 times after 2 hours.
  • Spoon 1/2 cup of the slush mixture into each glass, then pour about 1/3 cup of ginger ale into each glass and gently stir.
