Whip up quick and delightful Peachy Patty-Cakes from Rainbow Bakery Children’s Cookbook for a fun breakfast treat!
Ingredients:
  • 1 cup Gold Medal™ all-purpose or whole wheat flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar or packed brown sugar
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 1/2 cup coarsely chopped fresh or canned (drained) peaches
Instructions:
  • In a medium bowl, use a hand beater to whip the egg until fluffy. Mix in all ingredients except peaches until smooth, then gently fold in the peaches.
  • Preheat skillet over medium heat or griddle to 375°F. Lightly grease with shortening, if necessary.
  • Ladle slightly under 1/4 cup of batter onto the hot skillet or griddle for each pancake. Cook until pancakes are puffed and edges are dry. Flip and cook until golden brown on both sides.
