Warm peach upside-down cakes

Ingredients:
  • olive oil cooking spray
  • 415g can peach slices in natural juice, drained
  • 40.00 gm reduced-fat spread, melted
  • 53.75 gm caster sugar
  • 130.00 gm buttermilk
  • 4.40 gm vanilla essence
  • 150.00 gm self-raising flour
  • 150g light French vanilla Fruche, to serve
  • Pure icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C. Give the base of four 1-cup ramekins a light spray of oil and line them with baking paper. Place 2 to 3 peach slices in each ramekin, then finely chop the remaining peaches.
  • In a bowl, mix spread and sugar together. In another bowl, whisk buttermilk, egg, and vanilla. Combine with sugar mixture. Gradually add sifted flour, stirring until well combined. Gently fold in chopped peaches.
  • Pour batter evenly over the peach slices, making sure to spread it out. Bake for 20 to 25 minutes, or until a skewer inserted into the center comes out clean.
  • Loosen cakes with a knife, then invert onto plates. Sprinkle with icing sugar and serve warm with Fruche.
