WOW your loved ones with this elegant and delicious fruity dessert.
Ingredients:
  • 400g tub peach slices in juice, drained
  • 150g butter, softened
  • 161.25 gm caster sugar
  • 3 eggs, lightly beaten
  • 150.00 gm almond meal (ground almonds)
  • 250.00 ml plain flour
  • 180.00 gm thick vanilla custard
  • 187.50 ml frozen raspberries
  • 82.50 ml flaked almonds
  • Icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and grease a 3cm-deep, 18cm x 28cm (base) slice pan. Place the peaches on a paper towel-lined plate and gently pat them dry.
  • With an electric mixer, whip the butter and sugar until creamy. Incorporate the eggs one at a time, mixing thoroughly after each addition. Fold in almond meal, flour, and custard until well combined.
  • Spread the mixture evenly into the prepared pan. Gently press the peaches and raspberries onto the top, then sprinkle with almonds. Bake for 40 minutes, or until the top is golden and the center is just firm to the touch. Allow it to cool in the pan for 15 minutes. When ready, serve it warm and dust with icing sugar for a delightful finish.
