Peachy Pimm's & ginger beer punch

Delicious peach and mint punch - a vibrant party centerpiece.
Ingredients:
  • 1 x 750ml btl Ginger Beer, chilled
  • 500ml (2 cups) chilled lemonade
  • 250ml (1 cup) Pimm's No. 1 Cup
  • 2 peaches, halved, stones removed, cut into thin wedges
  • 62.50 ml fresh mint leaves
  • Ice cubes, to serve
  • Serve with Apple & Blue Cheese Stacks with Walnuts (see below)
  • 2 small Pink Lady apples
  • 1 x 200g pkt Dairy Lighthouse Blue Brie, chilled, thinly sliced
  • 30g (1/4 cup) walnut pieces, finely chopped
Instructions:
  • In a large punch bowl or serving jug, mix together the ginger beer, lemonade, Pimm's, peach slices, fresh mint, and ice cubes.
  • Core the apples using an apple corer, then slice them into 5mm-thick rounds.
  • Place the apple slices elegantly on a serving platter. Add a layer of blue cheese on top and generously sprinkle with walnuts. Pair it with the Peachy Pimm's & Ginger Beer Punch for a delightful combination.
