Chewy peanut butter cookies with a crispy crunch from wholesome amaranth cereal.
Ingredients:
  • 1.5 cups water
  • 0.5 cup amaranth
  • 1 cup peanut butter
  • 0.5 cup butter, softened
  • 1.5 cups all-purpose flour
  • 1.5 cups whole wheat pastry flour
  • 1 cup quick-cooking oats
  • 1 teaspoon baking powder
Instructions:
  • In a saucepan, bring water and amaranth to a boil. Simmer on medium-low heat until water is absorbed and amaranth is fluffy, around 20 minutes. Let it cool for 10 to 15 minutes before serving.
  • Preheat your oven to 375°F (190°C) for a perfect bake.
  • In a large bowl, combine cooked amaranth and peanut butter, beating until smooth. Mix in sugar until dissolved. Add butter and egg, stirring until smooth.
  • Combine the all-purpose flour, pastry flour, oats, baking powder, baking soda, and salt in a bowl. Gradually mix the flour mixture into the amaranth mixture until the dough begins to pull away from the sides of the bowl.
  • Roll the dough into small balls and arrange them 2 inches apart on a baking sheet. Use a fork dipped in flour to flatten the dough balls.
  • Bake in the preheated oven for 15 minutes until firm. Allow to cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack to cool completely.
