Wholesome Amaranth Bars

Wholesome Amaranth Bars: Quick and delicious bars with peanut butter, maple syrup, Cheerios, marshmallows, chocolate, and butterscotch. Ready in under an hour.
Ingredients:
  • 3 tablespoons butter
  • 1/3 cup peanut butter
  • 1/4 cup real maple syrup
  • 3 cups miniature marshmallows
  • 5 cups MultiGrain Cheerios™ cereal
  • 1 cup popped amaranth*
  • 1 cup dark chocolate chips
  • 1/2 cup butterscotch chips
  • Additional popped amaranth, if desired
Instructions:
  • Coat a 9-inch square pan with a light mist of cooking spray.
  • Melt 2 tablespoons of butter in a large saucepan over medium heat. Stir in peanut butter, syrup, and marshmallows until melted. Mix in cereal and 1 cup of popped amaranth until everything is evenly coated. Press the mixture into a pan.
  • In a small microwavable bowl, microwave the chocolate chips, butterscotch chips, and remaining 1 tablespoon of butter uncovered on High for about 1 minute, stirring once, until melted and smooth. Spread this delicious mixture over the bars, sprinkle with additional popped amaranth, allow to cool, then cut into 3 rows by 3 rows.
