Dilled Corn with Popped Amaranth

Wholesome corn side dish ready in 15 minutes from Betty Crocker's Heart Healthy Cookbook!
Ingredients:
  • 2 tablespoons uncooked amaranth
  • 2 boxes (9 ounces each) frozen corn
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh or 1 teaspoon dried dill weed
Instructions:
  • 1. Preheat a heavy skillet over medium-high heat until very hot. Toast 1 tablespoon of amaranth in the skillet for 30 to 45 seconds, stirring constantly with a wooden spoon until most of the seeds pop. Remove from skillet. Repeat with the remaining 1 tablespoon of amaranth.
  • Prepare and drain the corn following the instructions on the package. Mix in the butter and dill weed, then garnish with amaranth.
